BBQ Whisky Pulled Pork Sandwich

The idea for this recipe came from a trip to Costco and the resulting purchase of around a thousand pounds of pork shoulder.  God I love Costco.  Anyway, I was now in position to cook said pork, with the idea of slow cooking it in mind.  While this recipe won't beat the meal you would get in a southern BBQ restaurant, where the meat has been on one of those giant wood burning BBQ's for 72 hours, but it will be one of the best you make in a slow cooker. 

I always recommend leaving the dry rub on the pork at a minimum overnight, ideally 24 hours if you have the time.  As much as I love the whiskey in this recipe, the dry rub is really where all the flavour comes from.  The longer the rub has to sit into the meat, the deeper the flavour you will get.  I also tend to double the chili powder amount as I love spicy foods, but remember that you can always add the heat later on as a condiment if you have a group that is split between spicy and non-spicy.

Great for game day or picnic, this recipe is also great to make on a Sunday night and be eaten during the week.  It is great on pizza, baked potatoes and in tacos as well as on a bun!

Ingredients
  • PORK RUB
  • 6-7lb boneless pork shoulder
  • 1/2 cup brown sugar
  • 3 tbl onion powder
  • 1 tsp garlic powder
  • 2 tbl pepper
  • 3 tbl salt
  • 1 tsp oregano
  • 2 tbl smoked paprika
  • 1 tbl chili powder
  • 3 tbl oil (for browning)
  • --
  • SLOW COOKER SAUCE
  • 2 tsp Worcestershire sauce
  • 1/2 cup whiskey
  • 1/3 cup vinegar
  • --
  • SANDWICH
  • Buns (potato or tuscan style rolls work well)
  • Coleslaw
  • BBQ sauce
  • Pickles (optional)
Directions
  • Step 1 Pat your pork shoulder dry with a paper towel and set aside. Combine your dry rub ingredients (brown sugar, chili, onion, garlic, salt, pepper, oregano, paprika) and rub all over the pork. Rest overnight (24 hours if possible).
  • Step 2 Pour your oil in a large saucepan over medium-high heat. Once hot, brown your marinated meat on all sides.
  • Step 3 Place your browned pork into the slow cooker. Top with Worcestershire sauce, whiskey and vinegar. Cook on low for 8 hours.
  • Step 4 Pull out your cooked pork and, using two forks, pull the meat apart. It should fall apart easily. Remove the liquid from the crock pot (don't discard!) and put the shredded pork back in. Add back in the liquid slowly until you get your desired consistency. You don't want the pork to be too wet, but also don't want it to be dry. Set the crock pot on warm and let simmer until serving.
  • Step 5 Assemble your sandwich! Slather your buns with your favourite BBQ, layer on the warm pulled pork and top with coleslaw and pickles. Enjoy with a beer.
