Chipotle Tequila Lime Chicken

This recipe is a quick and easy way to step up your weeknight chicken game.  Just whip up a few ingredients into a marinade, leave it in your fridge overnight, pop it on the BBQ the next day and you're set.  My favourite flavor in this recipe is the canned chipotle peppers.  This smokey, spicy element adds depth and complexity to the dish, again an easy way to improve a standard meal. I actually prefer the canned peppers to fresh ones for this marinade as they come in a great adobe sauce that I add to the mix.  You can find these in the international section of any grocery store and they only cost a few bucks.  (As a side note, these canned peppers make for an excellent dip  - try I Wash, You Dry's Creamy Hot Chipotle Dip - or taco sauce - try Feasting at Home's Chipotle Mayo).

While this chicken is great on its own with a side salad and some elote (mexican corn), it also works well sliced in tacos or quesadillas. And with a margarita, of course!

Ingredients
  • 1 lb boneless chicken thighs
  • 2 canned chipotle peppers + 1 tbl adobe sauce from the can
  • 1 1/2 tbl fresh lime juice
  • 1/2 tsp cumin
  • 1/2 tso dried cilantro
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 2 tbl tequilla
Directions
  • Step 1 Chop chipotle peppers and combine with lime juice, cumin, cilantro, salt, pepper, onion powder, paprika and tequilla to form your marinade.
  • Step 2 Pour your marinade over the chicken thighs and let sit overnight.
  • Step 3 Preheat your BBQ to medium-high and place your chicken directly on the grates. Grill for around 6-7 minutes per side, or until the temperature in the thickest part of the thigh reads 165°F.
  • Step 4 Let cool for 5 minutes before service. These are delicious on their own, but also are great cut up and stuffed into a taco.
